It is unbeleivable hard to take pictures of this recipe’s result and make it look appetizing.
Ingredients: #
- 1lb Mayocoba beans
- 1 white onion
- 2 9oz Pork Chorizo stick (the fattier the better)
- Hot Sauce (Guacamaya or Valentina)
- 1 small pickled jalapeños can
- 12 oz shredded Chihuahua cheese (can be mozzarella too)
- Garlic powder (optional)
- Bacon (optional)
- Knorr chicken bouillon
- Salt
Instructions #
Peel then cut the onion in half, add it to a pot with the beans and fill with water until it’s about 3/4 full (around 10-12 cups of water if curious) Add about a tablespoon of chicken bouillon, salt and a dash of garlic powder (you can add minced garlic as well). You might need to add more water if it evaporates. Boil until beans are completely soft.
With care, pour the broth into a container (we’ll need some of it). Place the beans and onion into a blender (or mash them well in a big bowl) adding a spoonful of broth, little by little. Do this until getting a thick, but still flowing consistency, kind of a very thick pancake batter.
Now depending on the size of your pan, you might want to do this in 2 batches. Assuming we’re doing 2 batches:
In an oiled saute pan, cook 1 chorizo sausage then add about half of the mashed beans. Stir on a medium flame until it starts bubbling. Add 1 tablespoon of the pickled jalapeño juice and as many jalapeños as you want and keep stirring. Add 3 cups of shredded chihuahua cheese, one cup at a time, each time you stir it until it melts down and incorporates. Repeat until you add all the cheese (you can give or take, sometimes it can get too thick). If it gets too thick, add a tablespoon of the broth and stir. Finally add a healthy Tbsp of your Hot Sauce in it. (traditionally is the dark red sauce)
Repeat for second batch. As an option you may also add cooked bacon bits while stirring the beans.
You may garnish with crumbled queso fresco and more jalapeños.
